Sauerkraut

Sauerkraut is sliced white cabbage, which has been preserved by the action of various lactic acid bacteria.
Sauerkraut tastes sour because of this.
In Flanders a lot is said choucroute, after the French corruption of the original Middle High German sūrkrūt.
The modern German form is Sauerkraut.
